Tomato Rice Without Onion and Garlic

INGREDIENTS :

  1. Basmati Rice : 3 cup
  2. Tomatoes : 4-5 medium size
  3. Peanuts : half cup
  4. Ginger : 2 inch long piece (paste)
  5. Green Chilli : 2-3 chopped
  6. Whole Garam masala : 2 cardamom,1 inch cinamon stick,3-4 cloves,2 bay leaves
  7. Mustard Seeds: 1 tea spoon
  8. Jeera : 1/2 teaspoon
  9. Jeera powder: 1 tea spoon
  10. Red chilli powder : 1 tea spoon
  11. Turmeric powder: 1 tea spoon
  12. Salt: Taste wise
  13. Aachi kadai chicken powder: 1 tea spoon (optional)
  14. Curry leaves : 5-6
  15. Corriander leaves : freshly chopped

PROCEDURE :

First need to make the rice. For that you put some lemon juice and oil into the boiling water and then add rice and boil it for 15-20 minutes so that the rice could not be very soft and sticky and then drain the water and keep it aside. Now take a big kadai add oil into it and fry the peanuts and keep aside. In the same oil add mustard seeds , jeera , whole garam masala,bay leaves. After few seconds add ginger paste and chopped green chilli. Fry for some time and now add all the chopped tomatoes and curry leaves. cook for some time till the water gets little dry. Now add all the masala powder , haldi powder and salt , cook for some time till oil seperates. Now slowly start adding the rice and mix it with the masala , mix gently all the rice slowly . Add the fried peanuts into it and garam masala powder and mix well. Add freshly chopped corriander leaves and mix with the rice. Serve hot with cucumber or boondi raita and pakoras.
